Xhosa tradition places food at the center of every ceremony and gathering. Umngqusho (samp and beans) was Nelson Mandela's favourite dish. Elders are served first. The clicking consonants of Xhosa are musical — attempting a greeting will be met with warm laughter and appreciation.
